Course Description
This course examines food production in the modern world with a particular emphasis on sustainability and impact on the environment. Topics include global food production, demographic trends in developed and developing worlds, current threats and opportunities, environmental impact of food production – pollution and greenhouse gas emissions, intensive farming; alternative crop production systems, aquaculture and capture fisheries, milk production in the Irish context, food quality and safety, regulation and policy, and circular economy.

Topics in this course include: Irish foreign policy (political, diplomatic, and economic); role of regional and international institutions; case studies; the relationship between values, interests, identity, and foreign policy; foreign policy formulation; and theoretical approaches. Course Description

This course explores the historiography of media portrayal of crime in Ireland from the 1970s to the present. The course studies newspaper reporting of crime in Ireland; the broadcast media and emotive reporting; the role of the Garda Press Office; missing persons reportage; media ownership and white collar/blue collar crime; and the rise of the crime correspondent in both the print and broadcast media. Students also explore the blurred distinctions between fiction and reality in both US and Irish TV crime dramas; media stereotyping of crime and its influence on public discourse; and the complexities of media ownership in Ireland and the notion of ethical gate-keeping.

Course Description
This course examines a range of Irish religious writings from the early medieval period. Students use original sources, read in translation, in order to gain insight into the many-sided world of Christian faith in early Ireland. Themes include prayer, the saints, God's relationship with the cosmos, the continuing role of pagan tradition, and ideas concerning the afterlife and the end of the world.

Students critically examine some of the leading political ideologies of our time, and assess their significance as catalysts for social change. Course Description

This is a course about early language acquisition. Students learn to describe pre-linguistic and early linguistic development in children; outline the stages of phonetic and phonological development in typically-developing children; analyze the salient phonetic and phonological characteristics of speech samples from children typically developing speech; explain how children's vocabulary develops in the pre-school years; outline the course of early grammatical development in children; describe the processes involved in early simultaneous and sequential bilingualism; and appreciate the effects of early language delay and disorder on the acquisition of speech, language and communication.
